The province of Quảng Ninh in north-eastern Việt Nam is a world-renowned tourist destination noted for its stunning natural scenery, culture, and seafood. Hạ Long Bay is known for its thousands of tall limestone islands, and the capital Hạ Long is a base for junk boat tours. Many of these rainforest-covered islands, such as Bồ Hòn’s Sung Sot (Surprise Cave) and Đầu Gỗ island’s enormous grotto, have beach resorts or caves. Houses are built on wooden platforms in floating towns like Ba Hàng bay.

The delicious crispy squid cake of Hạ Long in Quảng Ninh province is well-known among visitors. But in Vân Đồn, an island district, there is another popular speciality: Pacific oysters.

The Pacific oyster has first introduced to Vân Đồn from Taiwan not long ago. Aquaculture advantages such as a calm sea, numerous rocky rapids, high salinity, and an excellent habitat aided Vân Đồn in raising and developing Pacific oysters for commercial use, as well as assisting the local economy to blossom. Surprisingly, Taiwan has emerged as the most important export market for Vietnamese Pacific oysters. The majority of these oysters are bought by traders, shucked and cleaned in Vân Đồn, then packed in plastic bags (1kg each, frozen) and exported to Taiwan, with some portions maintained for domestic use.

Farming Method

Oysters are cultivated in Vân Đồn utilizing the hanging method, which involves wooden rafts and ropes. Because oysters are molluscs that only eat planktons and algae in seawater, they don’t need to be fed during the farming process. Instead, oyster growers check and monitor their oysters on a regular basis to ensure that they are healthy and growing properly. Oysters develop to about 7-10 cm in length and 60-80 grams in weight after 4-5 months in the natural habitat, which are commercial harvesting criteria. The oysters are picked and brought to a shucking factory near the shore.

Production

Since 2012, the water surface area for oyster farming in Van Don has gradually expanded, with most oyster farms located in Bái Tử Long Bay area. The district is considered the largest area in the country in terms of oyster production and scale with about 4,000 hectares of oyster farming. The output supplied to the market is over 70,000 tonnes a year. According to statistics by the Office of Agriculture and Rural Development, about 350 tons of Pacific oysters are harvested every day in Vân Đồn and bought by traders in Cái Rồng port. According to data, as many as 10,000 workers directly or indirectly participate in the harvest and preliminary treatment of oysters in Vân Đồn. Because of its high concentration of oyster farming, Vân Đồn is considered the oyster capital of Việt Nam.

Local Specialities

Local chefs have been encouraged to experiment with new successful dishes inspired by Pacific oysters, such as oyster omelette, sour oyster soup, baked oyster with cheese, oyster porridge, and grilled oyster with spring onion oil, which have been highly welcomed by locals and visitors alike. Oyster floss is another speciality of Vân Đồn. To maximize the value of oysters, the producers in Quảng Ninh province have further invested in technology and equipment to make additional products, including oyster sauce, oyster cake, oyster spring rolls, dried oysters and even oyster extract.
